Simple Pancakes with Salmon and Sour Cream

Pancakes with Salmon, dill and Sour CreamThis is one of the recommendations from John for something different for breakfast.  He saw a recipe for small pancakes topped with sour cream or creme fraiche and smoked salmon on top of that with some pickled fennel and dill.

It’s getting too warm for porridge, there are only so many pancakes you can eat, cold cereal is boring and bacon and eggs can be overdone too.  We were eager to try something new.

Pancakes with Salmon, Dill and Sour Cream

The fennel pickles weren’t a goer for John or his dad so we left them out.  The pancakes with salmon were well received but the overall decision is, they needed just a bit of caviar on top.  The sort we can afford.  Next time!  These pancakes would be lovely for brunch with a mimosa.

I made a simple pancake batter with no sugar and put them in the oven to keep warm while we did the daily OJ squeezing and the mango slicing.  Before John’s dad arrived we didn’t eat breakfast.  We only grazed for lunch.  It’s no wonder I need to lose 5 kilos!

Pancakes with Salmon, Dill and Sour Cream

When the fruit and juice were ready, I put sour cream on the pancakes and then draped some smoked salmon on top and snipped some fresh dill.  Everyone left the table happy.

Ingredients
  • 200 grams smoked salmon
  • 3 tablespoons sour cream or creme fraiche
  • 1 tablespoon snipped fresh dill
Pancakes
  • 1 cup self-raising flour
  • 1 egg
  • ¾ cup milk
  • 50 grams (about half a stick) butter, melted.
Instructions
Pancakes
  1. Add milk to measuring cup and add the egg and melted butter. Whisk together until egg is incorporated.
  2. Add flour to mixing bowl and add milk mixture and mix well. (small lumps are fine)
  3. Heat griddle or skillet to medium and make several small pancakes.
  4. When edges look dry and large bubbles form on top, flip over and cook until light brown on the bottom.
Assembly
  1. Spread pancake with sour cream or creme fraiche and drape smoked salmon on top and add some sipped dill. (or add some caviar if you really want to splurge)

    It’s great to come up with something new for breakfast. I agree that cereal ia dull, even the chocolatey ones. I prefer savoury breakfasts anyway. This looks really fresh and delicious. GG

      Since John’s dad arrived (and hasn’t left) we make a big breakfast every day. It’s a struggle to come up with something new every day, let me tell you!

    I’ll come over with some masago (capelin roe) to add to the top of the salmon (we’ll sit it on top of the sour cream for a colour contrast with the smoked salmon) cause I love everything about that breakfast. 🙂

    I have another salmon/dill dish planned for later this week, a follow-up to the first one I did last week.

    There’s always something wonderful going on in your kitchen. I love how you have freshly squeezed orange juice and freshly sliced mango for breakfast and then there are pancakes staying warm in the oven. If you love your salmon, this is a wonderful breakfast xx

    This is one of those classic combos of flavor with a pancake twist! I agree caviar is necessary. And maybe a Mimosa instead of the OJ? ‘-) This would be a weekend, not weekday, breakfast for us. Really nice – thanks.

      I love mimosas with brunch. If I had mimosas for breakfast I’d get nothing done all day. Tomorrow is Melbourne Cup day so nobody’s going to do anything all day anyway. It’s a holiday in Victoria but not way up here in Queensland.

      Every morning John squeezes the oranges and I cut the mango and then we make breakfast. Today was scrambled eggs on toast. I’m never hungry for lunch but the FIL is!

    This is my favourite style of breakfast!
    I absolutely love smoked salmon, I think I could eat it a every meal. I am always really pleased when Mr GG makes a “kitchen” suggestion, e usually leaves the menu up o me and sometimes I run out of ideas 🙂

    I have never eaten this combination of ingredients… but I want to badly after seeing your photos. I love the salmon for that added saltiness. I can see why everyone was happy… porridge does not compare to this feast. 🙂

    These look absolutely wonderful! I would take the fennel and the dill, plus some caper berries! Have you thought of making potato pancakes or Swiss Rösti potatoes instead? They are a crowd pleaser!
