I was lost in breakfast paradise when eating today’s insanely good waffle breakfast. These could well be the best waffles in the world. No matter that I slurped a bit of maple syrup down my chin. That happens when you are paying more attention to the food rather than how it got to your mouth.
I was sure I already had the best, light fluffy waffle recipe but I think this one is better. It seems that Serious Eats got there first so I took their recipe and added a tablespoon of sugar, just because I wanted to.
When the first one came out, crisp and golden brown I put it on a plate and gave it to John to doctor up for his dad. He’d finished his yogurt and peaches and was ready for the second course of his breakfast. This man knows how to do breakfast. (and every other meal)
I made more waffles and then sat down to one of my own. I took one bite and my eyes rolled back in my head and I knew I was in waffle heaven. I think I could eat these waffles with no syrup, jam, ice cream or anything else but we’ll never know because I enjoy all the toppings.
If you haven’t found ‘the one’ when it comes to waffles, give this recipe a try. Serious Eats got it from someone named Robyn who got it from her friend Greg. Greg found it on this blog who got it from this Better Homes and Gardens Cookbook.
Waffles are wonderful for breakfast but they’re also amazing as a dessert. Growing up in Maine, waffles were always for breakfast and I’d never seen a waffle with ice cream on top until I moved to Australia and ordered one in a restaurant. I looked at it and looked at John and looked at the server who wanted to know what the problem was.
“Why is there ice cream on it?” I asked with an obvious shocked look on my face.
“That’s how waffles come,” she and John said at the same time.
So with that, I give you my waffle with vanilla ice cream and maple syrup drizzle. It was SO good.
- 2 egg yolks
- 1¾ cups milk
- ½ cup canola oil
- 1¾ cups plain flour
- 1 teaspoon baking powder
- 1 tablespoon sugar
- ¼ teaspoon salt
- 2 egg whites
- Separate the eggs into two small bowls
- Whip the egg whites to stiff peaks and set aside
- Whisk the egg yolks and oil
- In a large mixing bowl, whisk the dry ingredients and add the milk, oil and egg yolks and mix until the flour has been incorporated - you want lumps.
- Using a metal spoon fold in the egg white until it's nearly incorporated - a few dots of egg white won't be a problem.
- Pour ½ cup of batter onto your waffle maker and cook til golden brown.
- Serve with butter, syrup, ice cream, berries, fruit or anything else that takes your fancy.

I had never separated yolks and whites while making waffles before – very intrigued to try your method! My daughter has been eating ice cream with her waffles for the past 5 years – I asked her where she learned it and she mentioned she used to watch this Aussi show about a horse stable where the gals would eat theirs like that….I always thought she was just trying to trick me into letting her eat ice cream for breakfast! Ha!

I’ve been dying for waffles but when I went to breakfast this morning I was afraid they wouldn’t be GREAT! Oh how I wish I hadn’t given my waffle iron away. I really, really need to get a waffle iron. These look great! I might save the ice cream for making a dessert waffle, though, rather than a breakfast one. I like Louise’s idea of chicken and waffles — I’ve often thought it’d be fun to turn waffles into a savory dish. Yet another reason to buy that waffle iron!
Can you make waffles without a waffle pan, Maureen? I rather fancy some but don’t have the equipment.

I always make pancakes over waffles because I’m too lazy to lug out the waffle iron and the griddle is closer. I think these would definitely be worth the effort though, they look perfect! BTW, I hope that ice cream covered waffle was for breakfast!

Oh yum, waffles with ice cream makes perfect sense to me, maybe that is how the waffle cone was invented 🙂 This has me hankering for a waffle.

Maureen, wow! These waffles look wonderful. But I think you and I might have to eat waffles together one day and see who can roll their eyes farther back in their head. Whoever wins get an extra waffle. Waffles are my sweet spot and these look amazing!

The browned crunchy outside is my favorite part of a waffle. Yours look like golden perfection! I love how recipes pass from source to source. As children we used to play a game called “Telephone”, where you would whisper a silly message from one person to the next and see how jumbled the message was by the time it got to the last person. This recipe reminds me of that game…passed from book to person to person to blog to person…but in this case each recipient perfected, rather than jumbled, the message. 🙂

well I am obviously showing my Aussie-ness as I would always put icecream with waffles tho I do love them with bacon and maple syrup as well as the ice cream…I like them any time of day or night so am fine with them for breakfast or dinner. but i had never thought of making my own; perhaps this recipe will inspire me to try it!

I’m a bit of a waffle novice – they weren’t something I had growing up and I don’t know if I have ever had really good fresh ones – so this has me intrigued and a little hungry 🙂

Waffles are almost never for breakfast here and so often come with Ice cream. I’ve never made them, I think it’s fear that they’d be too delicious and I’d have to be craned out of the house from eating too many. GG

Those do look insanely good!!!! I have never made them as I don’t have a waffle maker, but my kids love it, so whenever we are having breakfast outside, these are one of the most sought after food.

I’ve made several versions of waffles and these sound superb. My favorite is the Liege waffle and I make those when the kids come home. Now this waffle, well, I might make that tomorrow! And I have strawberries in the fridge!

Waffles to me are a dessert and I love it topped with chocolate and peanut butter mousse, and ice cream, there is always a place for ice cream in a dessert dish 🙂

These do look like insanely good waffles! I really must buy a waffle pan very soon. I loved your story about ordering waffles in Australia and them coming with ice cream, they do that too in the UK ice cream and cream all over them and served for dessert. Still tasty though!

I am a wee bit overboard, but it is soooo fun. And truly truly truly I love waffles. Mom made pancakes all the time. Somehow waffles rarely made the menu. Basically I was warped several decades ago and have never recovered.
