How good is chocolate for breakfast? I think it’s the bomb but I’m rather alone in that opinion. Doesn’t matter – all the more for me.
I was going through the pantry and realized that I had bought way more chocolate chips than I remembered. Then I found a bag of wonderful cocoa from King Arthur Flour that had been sent to me as a gift and my taste buds began to crank.
Muffins are so easy to make and they’re really good if you remember not to overmix the batter. A chef friend of mine once said, “Maureen, when mixing muffins and you think, ‘one more stir’ – stop there and don’t stir that last time – you’ll thank me.” She was right.
My muffins are always light and soft and they rarely last the day if someone stops by for coffee.
- ½ cup cocoa, sifted
- 2¼ cups self-raising flour, sifted
- 1 cup caster (superfine) sugar
- ½ cup vegetable oil
- ¾ cup milk
- 1 teaspoon vanilla extract
- 2 eggs
- ¾ cup dark chocolate chips (add more if you're a chocoholic)
- Preheat oven to 180°C/350°F
- Put liners in a 12 hole cupcake tin or grease a non-stick pan
- In a large bowl, add the sifted flour, sifted cocoa, and sugar and whisk together.
- Whisk the oil, milk, vanilla and eggs in a large measuring cup.
- Make a well in the dry ingredients and add the oil mixture
- Using a wooden spoon, stir until just combined (don't over-mix).
- Spoon mixture evenly into muffin tin and place in preheated oven.
- Bake for 25 minutes or until firm to touch and a skewer inserted into the center comes out clean.
- Cool in pan for 5 minutes. Transfer to a wire rack to cool.

They look amazing, Maureen! Great tip about mixing the batter! Do you find that the castor sugar makes a difference? I guess in the US we’d have to spin it through the blender?
Marie, you can find castor sugar in the grocery stores here in the US, it will say superfine sugar or bakers sugar on it. However it does work to give regular sugar a spin in the blender 🙂

That “one more stir” rule should be learned by all of us! Works with pancake batter, too (and loads of other things). Who can resist chocolate? And muffins? I’ll bet Rob had several.
Pamela @ Brooklyn Farm Girl says
Oh yes yes yes yes to these chocolate muffins! I love the small amount of ingredients happening here too.
I’d drive a couple hundred miles to stop for coffee at your place….
can I have a muffin?
Can you drive over water? About 5,000 miles? 🙂
I wish! 😉 😉 😉

I love that rule about muffins… it’s so true… much the same for scones… if you over mix a scone batter, you’ll have rock cakes! Maureen your chocolate muffins look sooooooooo delicious. Such a great recipe, I’m pinning and bookmarking right now. And who said you can’t have cake for breakfast. Don’t you know, that’s been my rule for years xoxo
I LIKE your rule.

Thanks so much!
If I showed this to Rich he’d want to know why he doesn’t get chocolate muffins for breakfast. And he wouldn’t share the batch with anyone. Which probably explains why he doesn’t get any!
LOL I like your style

I normally don’t eat chocolate for breakfast, but these yummy muffins could be an exception. They look so chocolatey and moist! I don’t think I’d need the butter. 🙂

I love indulging in chocolate over breakfast during the weekend. On milk, crepes or cupcakes. These muffins are amazing – and loved the butter on the side!
You do realize that muffins can be shipped easily, Maureen! Do you need my address? 🙂
I would so get my chocolate fix with these chocolatey muffins! Perfect with a tall glass of cold milk on a February afternoon!
Oh my, but the muffins look beautiful! I want to stop by your house at breakfast!
Lily (A Rhubarb Rhapsody) says
These are what chocolate muffins should look like, so very rich and they just scream “chocolate overload”. I’m terrible at over mixing, so paranoid about having lumps of flour in the final product. Unfortunately, that means I sometimes end up with terribly dense baked goods. I will have to heed your friends advice!
Coffee and Crumpets says
Those look magnificent! Perfect with a cup of coffee. I’m not a breakfast person but definitely an elevenses person with some coffee and these would be perfect! The “one more stir” is so true! Pancakes, muffins and scones….need love, not stirring!
I am still getting my feet wet in the baking department… but stirring is a lesson I have learned well. I try not to beat the heck out of my batters. Love these muffins. 🙂
Looks like I need to buy some cocoa!
Denise Browning@From Brazil To You says

My daughter used to love the chocolate muffins from Costco. We used to buy them whenever she had friends sleep over. Of course, that was many, many moons ago, but she hasn’t forgotten those muffins. I think these may work.

Oooo I love chocolate muffins with chocolate chips, and I do like them better with oil than with butter. My son was asking to make cookies, so I think I’ll have him make your muffins instead.
Amy @ Elephant Eats says
So excited for another of your muffin recipes. I forgot to tell you that I made your blueberry muffins a couple weeks ago because I got a craving and my husband wouldn’t stop raving about them! He told me to make them again soon. I think I might have to try making these first though 😉
I could never refuse this muffins. I adore chocolate and these are looking great.
Nami | Just One Cookbook says
I would love to have this right now with my coffee! I was looking for something to eat accompanying with my 2nd cup of coffee but I have nothing in the kitchen (that often happens to non-baker’s home). Looks so moist and delicious. Chocolate muffins are my kids’ #1 pick. One time I ate so frequently that I couldn’t take it, but now I’m craving again!
Emma @ Bake Then Eat says
Oh wow these look to die for, yes I could quite happily have a few of these for breakfast anytime. I can understand why they don’t last the day when made.
Linda V @ Bubble and Sweet says
I always seem to end up with too many chocolate chips. I think I hoard them when they are on special at the supermarket. These muffins sound totally delish.
