Chocolate Chocolate Chip Muffins

How good is chocolate for breakfast?  I think it’s the bomb but I’m rather alone in that opinion.  Doesn’t matter – all the more for me.

I was going through the pantry and realized that I had bought way more chocolate chips than I remembered.  Then I found a bag of wonderful cocoa from King Arthur Flour that had been sent to me as a gift and my taste buds began to crank.

Chocolate Chocolate Chip Muffins

Muffins are so easy to make and they’re really good if you remember not to overmix the batter.  A chef friend of mine once said, “Maureen, when mixing muffins and you think, ‘one more stir’ – stop there and don’t stir that last time – you’ll thank me.”  She was right.

My muffins are always light and soft and they rarely last the day if someone stops by for coffee.

Chocolate chocolate chip muffins are a hit with the whole family, especially for weekend brunch.

Serves: 12
Ingredients
  • ½ cup cocoa, sifted
  • 2¼ cups self-raising flour, sifted
  • 1 cup caster (superfine) sugar
  • ½ cup vegetable oil
  • ¾ cup milk
  • 1 teaspoon vanilla extract
  • 2 eggs
  • ¾ cup dark chocolate chips (add more if you're a chocoholic)
Instructions
  1. Preheat oven to 180°C/350°F
  2. Put liners in a 12 hole cupcake tin or grease a non-stick pan
  3. In a large bowl, add the sifted flour, sifted cocoa, and sugar and whisk together.
  4. Whisk the oil, milk, vanilla and eggs in a large measuring cup.
  5. Make a well in the dry ingredients and add the oil mixture
  6. Using a wooden spoon, stir until just combined (don't over-mix).
  7. Spoon mixture evenly into muffin tin and place in preheated oven.
  8. Bake for 25 minutes or until firm to touch and a skewer inserted into the center comes out clean.
  9. Cool in pan for 5 minutes. Transfer to a wire rack to cool.

    They look amazing, Maureen! Great tip about mixing the batter! Do you find that the castor sugar makes a difference? I guess in the US we’d have to spin it through the blender?

      Marie, you can find castor sugar in the grocery stores here in the US, it will say superfine sugar or bakers sugar on it. However it does work to give regular sugar a spin in the blender 🙂

    That “one more stir” rule should be learned by all of us! Works with pancake batter, too (and loads of other things). Who can resist chocolate? And muffins? I’ll bet Rob had several.

    I am stopping by for coffee at your place Maureen! Yes – yes yes to chocolate for breakfast (and dinner and lunch and snack) I put a few chocolate chips in my breakfast oatmeal 99.9 percent of the time! These muffins sound heavenly – thanks for the tip about overbeating, I am always tempted to beat it one more time!

    I love that rule about muffins… it’s so true… much the same for scones… if you over mix a scone batter, you’ll have rock cakes! Maureen your chocolate muffins look sooooooooo delicious.     I am not really a breakfast eater but it these were served hot out of the oven with my coffee I would love you forever… I am sure your hubby agrees! The chocolate is so dark too! Full of lovely antioxidants I am sure 😉 …almost healthy 😉

    I normally don’t eat chocolate for breakfast, but these yummy muffins could be an exception. They look so chocolatey and moist! I don’t think I’d need the butter. 🙂

    These are what chocolate muffins should look like, so very rich and they just scream “chocolate overload”. I’m terrible at over mixing, so paranoid about having lumps of flour in the final product. Unfortunately, that means I sometimes end up with terribly dense baked goods. I will have to heed your friends advice!

    My daughter used to love the chocolate muffins from Costco. We used to buy them whenever she had friends sleep over. Of course, that was many, many moons ago, but she hasn’t forgotten those muffins. I think these may work.

    I would love to have this right now with my coffee! I was looking for something to eat accompanying with my 2nd cup of coffee but I have nothing in the kitchen (that often happens to non-baker’s home). Looks so moist and delicious. Chocolate muffins are my kids’ #1 pick. One time I ate so frequently that I couldn’t take it, but now I’m craving again!
