These waffles are lighter than air and so delicious!

  • 2 egg yolks
  • 1¾ cups milk
  • ½ cup canola oil
  • 1¾ cups plain flour
  • 1 teaspoon baking powder
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • 2 egg whites
  1. Separate the eggs into two small bowls
  2. Whip the egg whites to stiff peaks and set aside
  3. Whisk the egg yolks and oil
  4. In a large mixing bowl, whisk the dry ingredients and add the milk, oil and egg yolks and mix until the flour has been incorporated - you want lumps.
  5. Using a metal spoon fold in the egg white until it's nearly incorporated - a few dots of egg white won't be a problem.
  6. Pour ½ cup of batter onto your waffle maker and cook til golden brown.
  7. Serve with butter, syrup, ice cream, berries, fruit or anything else that takes your fancy.
