This is one of the recommendations from John for something different for breakfast. He saw a recipe for small pancakes topped with sour cream or creme fraiche and smoked salmon on top of that with some pickled fennel and dill.
It’s getting too warm for porridge, there are only so many pancakes you can eat, cold cereal is boring and bacon and eggs can be overdone too. We were eager to try something new.
The fennel pickles weren’t a goer for John or his dad so we left them out. The pancakes with salmon were well received but the overall decision is, they needed just a bit of caviar on top. The sort we can afford. Next time! These pancakes would be lovely for brunch with a mimosa.
I made a simple pancake batter with no sugar and put them in the oven to keep warm while we did the daily OJ squeezing and the mango slicing. Before John’s dad arrived we didn’t eat breakfast. We only grazed for lunch. It’s no wonder I need to lose 5 kilos!
When the fruit and juice were ready, I put sour cream on the pancakes and then draped some smoked salmon on top and snipped some fresh dill. Everyone left the table happy.
- 200 grams smoked salmon
- 3 tablespoons sour cream or creme fraiche
- 1 tablespoon snipped fresh dill
- 1 cup self-raising flour
- 1 egg
- ¾ cup milk
- 50 grams (about half a stick) butter, melted.
- Add milk to measuring cup and add the egg and melted butter. Whisk together until egg is incorporated.
- Add flour to mixing bowl and add milk mixture and mix well. (small lumps are fine)
- Heat griddle or skillet to medium and make several small pancakes.
- When edges look dry and large bubbles form on top, flip over and cook until light brown on the bottom.
- Spread pancake with sour cream or creme fraiche and drape smoked salmon on top and add some sipped dill. (or add some caviar if you really want to splurge)
It’s great to come up with something new for breakfast. I agree that cereal ia dull, even the chocolatey ones. I prefer savoury breakfasts anyway. This looks really fresh and delicious. GG
Since John’s dad arrived (and hasn’t left) we make a big breakfast every day. It’s a struggle to come up with something new every day, let me tell you!
They are like little smoked salmon blinis in breakfast format, very clever!
Very much so, Mallory.
A wonderful savory breakfast choice!
The men at the table were all smiles.
Love the sound of these savory pancakes.
There were smiles all around.
I’ll come over with some masago (capelin roe) to add to the top of the salmon (we’ll sit it on top of the sour cream for a colour contrast with the smoked salmon) cause I love everything about that breakfast. 🙂
I have another salmon/dill dish planned for later this week, a follow-up to the first one I did last week.
Oooh, I’ll stand by the door and wait for you!
I think this makes for an elegant meal for breakfast. Very nice.
Velva, it was a delightful breakfast. Thanks heaps for stopping by.
There’s always something wonderful going on in your kitchen. I love how you have freshly squeezed orange juice and freshly sliced mango for breakfast and then there are pancakes staying warm in the oven. If you love your salmon, this is a wonderful breakfast xx
Can I confess that just one day I’d like to sleep in and hand over a bowl and a box of cereal? 🙂
This is one of those classic combos of flavor with a pancake twist! I agree caviar is necessary. And maybe a Mimosa instead of the OJ? ‘-) This would be a weekend, not weekday, breakfast for us. Really nice – thanks.
I love mimosas with brunch. If I had mimosas for breakfast I’d get nothing done all day. Tomorrow is Melbourne Cup day so nobody’s going to do anything all day anyway. It’s a holiday in Victoria but not way up here in Queensland.
Just perfect to start up a day Maureen,
You’re children is so lucky to had a michelin quality breakfast…..
btw, i think i’ve not had a savoury pancake for a long time, i guess this post inspired me for my next cooking project…
Actually I have no children but I do have a 92 year old father-in-law that sometimes feels like children. 🙂
I usually do this with bagels but not on pancakes, definitely a must try next time I buy some smoked salmon
It’s a great way to use up that bit of smoked salmon that you have left over from another recipe. 🙂
Blinis, smoked salmon and sour cream is a dream breakfast! No wonder everyone left the table happy 🙂
Almost blinis and perfect breakfast!
Yum Maureen I love this combination. I have a similar recipe from the women’s weekly cookbook that I’ve been making for years. It’s a keeper and I always whip it out for dinner parties.
Krissie – Pearls of Style
What’s your recipe, Krissie?
It’s for mini chive blinis with smoked salmon and cream fraiche. Definitely a favourite of mine.
kinda sorta but not exactly 🙂
I love that mango cutting is a daily ritual! Yay for summer!
I love salmon for breakfast, combining it with sour cream just sweetens the deal 🙂
Every morning John squeezes the oranges and I cut the mango and then we make breakfast. Today was scrambled eggs on toast. I’m never hungry for lunch but the FIL is!
Such a gourmet breakfast, that John knows how to choose something yummy!
He doesn’t do it often but when he asks for something, it’s usually a good idea.
What a beautiful idea. I often make crunchy potato pancakes for dinner and top them with smoked salmon. But I adore this idea of making simple breakfast pancakes into something so special.
They’ve been asking for this again so it’s a keeper.
There has to be a better word than drooling right but salivating just sounds so mundane. LOVE this. Not the same but makes me want to run out for a lox and cream cheese bagel STAT!
LOL I know what you mean. Some photos I see do make me drool but we should come up with a better word that doesn’t sound icky.
Love salmon anytime, anywhere, any way. Love this idea!!!!
Oh my, this sounds good. I could have this for dinner!
Next time I don’t feel like doing much, that might happen here too.
You sure are generous with your sour cream, Maureen, love that!
I followed instructions from the Mister! 🙂
Oooh! This sounds like my kind of breakfast! With a chaser of cake, of course…
Don’t tell John’s dad because I’m trying to trim off those 4 kilograms of weight he’s gained since he arrived. He’d eat cake with meals, in-between meals and as a midnight snack!
I too agree a topping of caviar would put it over the top.
Yep, we’re on to that, Norma!
This is my favourite style of breakfast!
I absolutely love smoked salmon, I think I could eat it a every meal. I am always really pleased when Mr GG makes a “kitchen” suggestion, e usually leaves the menu up o me and sometimes I run out of ideas 🙂
I know what you mean about their suggestions. John knows I’ll come up with *something* so he doesn’t do too much suggesting. I get suggestions if he’s had to sit in a waiting room with magazines. 🙂
I love the idea of a savory pancake but I’ve never tried it before! My husband loves smoked salmon, he would probably inhale these!
I hope he likes them, Lauren!
One of my absolute favourites Maureen! And perfect with a “Bucks Fizz”!
LOL, you are so funny, Peter. Thanks for visiting. 🙂
Dear Maureen, This is so “gourmet”!! If you were to have this out it would cost a fortune! It looks wonderful.
I hope that you are feeling better dear friend. I will keep you in my prayers.
Blessings and hugs, Catherine xo
I have ONLY JUST embraced smoked salmon into my life, and now I can’t get enough! These look perfect for me.
I know what you mean, Sarah!
Looks good to me Maureen. Clever idea keeping the pancakes warm in the oven. I know it’s not rocket science but I wouldn’t have thought of it!
Rob likes his pancakes warm, he told me. 🙂
These “simple” pancakes look anything but in your photos, Maureen. What a nice meal and you’re right. This dish would be perfect for brunch.
I’m having friends over for brunch soon – this will be on the menu!
These are gorgeous! Looks like some fine dining to me 🙂 Pinning!
Aww Sandra, what a nice thing to say.
Now that is a breakfast worthy of a king!
I am always on the look out for new and refreshing ideas for breakfast and this is a great one
Thank you for the inspiration Maureen
This qualifies to be part of a nice brunch I think. 🙂
‘Simple’ and ‘pancake’ certainly appeal to me. You could have added elegant too!
It did look quite nice on the plate. Caviar was needed though 🙂
I have never eaten this combination of ingredients… but I want to badly after seeing your photos. I love the salmon for that added saltiness. I can see why everyone was happy… porridge does not compare to this feast. 🙂
I agree. I’m not a porridge sort of woman 🙂
Maureen, what an elegant breakfast. Hope you are feeling better! Thinking of you!
I’m lots better, Marie, thanks!
Breakfast in my favorite meal of the day, Maureen! This dish looks fabulous! It reminds me of blini in some ways. I like to put sour cream on the inside and the lox on top shredded into teeny tiny pieces, lol…Now you have me craving breakfast, again!!!
Thanks for sharing…
Very blini-ish 🙂
Maureen, Such an elegant looking breakfast! Pancakes are one of my favorite things to eat…add the salmon and sour cream…over the top! This has to go on my “to do” breakfasts.
There is breakfast and then there is breakfast! We eat breakfast, but it’s nothing like this. Your FIL has had quite a bit of influence on your eating habits. Need to pin this one for the weekend. Bobby and I would love this!
These look absolutely wonderful! I would take the fennel and the dill, plus some caper berries! Have you thought of making potato pancakes or Swiss Rösti potatoes instead? They are a crowd pleaser!
I did think about the rösti and I thought these teensy pancakes would be quicker and I could get to work. 🙂 It does sound terrific and I’ll go with some caviar next time.
This could be breakfast lunch or dinner for me.
Amen, Angela!
Very elegant! I just picked up some honey smoked salmon, and now I know what to make. 🙂
I hope you like it!
