You know I’m not one to say every recipe I post is the best. I know there are terrific cooks, chefs and bakers out there that are ten million times better than I am. When I say these banana muffins are the best, I’m not joking.
Now if you like dry muffins (which I don’t) then this might not be the best for you because these are the M word (moist), light and delicious, especially right out of the oven. Once they were cold, the old one and I did taste testing and they were still marvelous. If there are any left by tomorrow I’ll let you know how they are on day two.
The secret was the extra banana. Normally I use 3 large bananas in my muffins. Some recipes call for 3 small or 2 large but I used 4 large bananas. Why? I couldn’t bear to toss out that lonely last banana.
Usually I serve muffins with a bit of homemade butter and I’ll admit that John’s dad did want butter but that was before he tasted them. I didn’t need anything to go with these.
I added a streusel-ish topping but honestly, I think these would have been terrific without it.
- 4 large very ripe bananas mashed
- 1 egg (beaten)
- ½ cup sugar (you could use more if you like them REALLY sweet but the bananas are sweet enough)
- ⅓ cup butter, melted
- 1½ cups plain all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda (bicarb)
- ½ teaspoon salt
- ½ cup plain flour
- ¼ cup brown sugar
- ½ stick (57 grams) cold butter
- ¼ teaspoon cinnamon
- Preheat oven to 180C/350F
- Mash bananas and add the lightly beaten egg, sugar and butter and mix well to combine and set aside.
- In another bowl add the flour, baking soda, baking powder and salt and whisk well. Add nuts or chocolate or whatever add-ins you want to the dry ingredients.
- Add dry ingredients to wet ingredients and mix until nearly all the flour has disappeared. Overmixed muffins are tough.
- Pour into greased cupcake pans (add streusel if you wish) and bake for about 20 minutes. Touch the tops and if they spring back, they're done.
- Place all ingredients into a food processor and pulse until it's streuselly. (or crumbly) If you don't have a processor, a fork works just fine - or your fingers.

I was just thinking about that on our very long drive home from Illinois yesterday. I was wondering how much whipping cream does it take to make a pound of butter (454g)? Once when I was a kid my dear Mom asked me to whip the cream for dessert and I made butter! We served it for dinner, my Mom was great and used this mistakes as lessons.

I love homemade butter, I’ll admit it. It’s so fresh and delicious. If you get good cream there’s not a lot of whey/buttermilk. It’s not as cheap as buying butter from the supermarket but I like being able to adjust the amount of salt or other additives like herbs or honey.

I wanted to let you know that we made these muffins and they were OUT IF THIS WORLD!! Super moist the the BEST banana muffins EVER. We even made some substitutions, because we did not have some of the ingredients available at home. We used whole grain spelt flour instead of regular white flour and coconut oil instead of butter and we added chocolate chunks and walnuts. They were fantastic! We made them Friday evening and by the end of Saturday there were none left! Great Recipe, Thank you so much!

Made these mini muffins for a dessert with cream cheese frosting for a dinner party at a friends (we have little kids). I threw in mini chocolate chips for half the batter. The kids and adults LOVED them! Making more tonight for my daughter’s kindergarten snack day tomorrow but without the frosting. I only have three bananas left to use so I’m throwing in some unsweetened applesauce this time and maybe a little bit more coconut sugar. I’m hoping they’ll be just as good. I found this recipe a couple months ago and have been making them religiously since as my kids loooooooove them! Not sure why I never tried adding another banana, it’s totally the secret. I’ve been adding cinnamon and flaxseed, as well as decreasing the sugar and doing half whole wheat flour and they are still amazing!! After making these muffins, I just had to leave a comment! They were, in the words of my husband, “Just perfect”! Very banana-y, not too sweet, and deliciously moist. [There’s that word again 😉 ]
I made mini-muffins with a 24 cup tray, so I only had to cook for 15 minutes at 350 degrees. I’m also a spicy person, so I added 1 Tbsp cinnamon, 1/2 tsp nutmeg, and 1 tsp vanilla. For fun, since mini muffins are so easy to play around with, I tried adding chocolate, walnuts, pecans, cookie crumbles, craisins, and your streusel topping to individual little guys to test it out before making the whole batch. Honestly, you were absolutely right — they’re perfect as is! I ended up going with the streusel for the rest of the batch and was delighted with the results. It made about 42 mini-muffins (which, of course, lasted less than a day).

I don’t know whether to rate these muffins at a 10 or not. My boyfriend *only* ate four, as soon as they came out of the oven. Two hours later and he’s sniffing around, asking me where I stashed the muffins.
The recipe made 16 standard-sized muffins. I had to cook them longer than 20 minutes, as they seemed almost too moist. They turned out perfect and perfectly delicious. A keeper recipe.

I followed the recipe exactly except that 3 of the bananas were slightly less than “large” and I added about ¾ cup of frozen blueberries to the batter (which was unexpectedly thick). The muffins were good, moist, not too sweet but definitely have that undesirable bitter aftertaste of baking powder. 1 teaspoon each of powder and soda seemed like a lot to me and apparently it was. Anybody else?

Mini loaves would bake at the same temperature but less time. Not knowing the size of the pan, I’d bake until the center rises and stick a skewer in and if it’s not wet with batter, it’s done.

Excellent recipe…doubled the ingredients and made 18 extra large muffins. Baked for 25 minutes. Substituted butter with coconut oil and added large coconut flakes and roughly chopped pecans. The muffins are beautifully moist and full of banana flavor. Do not over stir batter — as Maureen mentions, makes the muffins tough.

Those are some weird looking muffins. Here’s hoping they taste good even though the really mosit ones include sour cream.

I added walnuts to the streusel topping and dark chocolate chips to the muffins. Otherwise followed the recipe exactly . These were perfect, and so moist. I hate dry muffins and banana muffins are often dry – not these! I’m going to try to use this recipe for banana bread next time (mine always has dry crusts, I hope this recipe will amend that!). Thank you for your wonderful recipe.

… So I’m still making these muffins, and they’re still fantastic. I’m pretty certain my boyfriend is letting all his bananas go brown – just so that I will insist on baking with them, instead of having them thrown out. He loves all things banana and is obsessed with these muffins! The only thing I do differently is add a little cinnamon to the batter and streusel. My best friend ate 3 at one sitting, and says they’re the best muffins she’s ever had. Thanks again for your wonderful recipe!

These turned out really well. Super yummy! I folded in some walnuts and semi sweet chocolate chips, added the streusel to the top and got two thumbs up from my kids and mother-in-law. Thanks for the great recipe!

Thank you for this great moist recipe. I have been making for a couple of years and then I had only 2 bananas so I grated an organic apple and two organic carrots, added some shredded coconut ,some rough chopped walnuts, cinnamon and a few currants. Delicious??? I don’t do the topping but it sounds awesome.
PS I also use extra virgin olive oil instead of butter and is quick and mmm mmm ??

I would skip the streusel topping next time, because in order to have to topping done, you have to overbake the muffin.

These really are the best banana muffins. I added about 1/2 up chocolate morsels and baked for 30 minutes with the strusel topping. Came out perfect!

Oh, my…my family is addicted! Very good recipe, thank you! They are heavenly… not too sweet, makes the banana flavor shine 🙂 I added 2 tsp of baking powder by accident, they came very fluffy and used Avodaco oil instead of butter.

I have tried MANY banana muffin recipes. These truly are the best. Love that they don’t have as much sugar as most other recipes. The streusel topping was perfect. My kids loved them. Super light and tender. A lot of other recipes make a very dense muffin.

I made these muffins yesterday! They are probably the best ones I have ever had! I did tweak the recipe slightly! I added 1 cup of semi sweet chocolate chips and instead of cinnamon in the streusel topping I added 2 teaspoons of cocoa pounder!! They were a huge hit with my family!! And sooo moist! Even the next morning they were still super moist and delicious! Definitely my new favorite recipe!

Thank you for this yummy recipe ~ I made the following tweaks :
I opted to add protein & fiber. Added oats, made almond flour & added walnuts, raisins. I added cinnamon, nutmeg, allspice, cloves as well. I soaked the raisins in maple syrup & vanilla, to soften them up first. I lowered flour to compensate for oats & almond flour. I added strussel topping but again with oats, sugar, cinnamon & ginger cookie crumbs made into fine flour consistency. Worked great!

This has been my go too banana muffin recipe since I discovered it a couple of years ago. Make these at least a couple times a week. Easy-quick and so delicious! My 6 year old gobbles them up! And for him… they are a dessert! No changes needed to this recipe! Some times I add some chocolate chips! And honestly.. the topping is not even necessary but makes them even that more decadent. Thanks for this one!!

Made these today as I had four VERY RIPE bananas that were ready for baking bread with. This recipe ROCKS! I give it 5 stars, took photos and shared with my family and friends on FB. I’ll be packing them away to take over when I visit a visiting family member who has been in da nang for the past couple of years. He and his father will love them as much as I do I think. DEFINITELY a keeper recipe and I imagine I’ll be making this in lieu of banana nut bread in the future. I used pecans (because I had them) in place of the walnuts and included the streusel on top which I LOVE. The muffins are moist but baked through; perfection.

I just HATE when people give ratings or leave reviews for recipes that they haven’t even tried yet. Absolutely NO help to anyone wondering if they should try it. I have made this 6-8 times now, and I can vouch for it that this is the best recipe ever!!! My 5 year old wants to eat these every morning before school. There are only a few adjustments I made – I added a cup of blueberries, walnuts, and didn’t put on the streusel. I also substitute 1/4 c whole milk mixed with 1/4 cup of beans (chickpea flour) for the egg, because we are lactovegetarian. The results have been consistently amazing. Thank you so much for sharing this recipe with us!!!

After reading all the rave reviews I gave this a try. Honestly they came out very bland. People were even asking me if these were low carb or something. I looked over the recipe again but I followed everything exactly as it says. I even added a little extra sugar. It would probably be better without the topping.

I have made alot of banana muffins/bread in my time and have stayed with my tried an true recipe (mom’s….shhhh) until I made these. My word they are the best and everyone who tries them agrees. I do add the streusel but there is no need for chocolate or nuts. My husband who usually is not a big fan of banana bread said these were the best he has ever tasted (this is huge being there is no chocolate involved!). This recipe is a keeper for sure!

These were everything you promised; super-moist, full of banana flavor, and hard to resist. I found the recipe by searching specifically for a recipe that used 4 ripe bananas, and so glad I stumbled across this one. The muffins were amazing. I always try a recipe exactly as written before introducing variations, so my next batch will be made with the butter substitute, Earth Balance, to satisfy a family member’s dairy-free requirement. I make these all the time and my whole family absolutely loves them. I don’t do the strudel topping because I they’re healthier without it and they taste great as is.
