Pumpkin and Asparagus Quiche

I took the dog for a walk the other day.  I promised him if he read his book for 10 minutes I’d take him to the beach.  I believe he heard, “blah blah blah, sit, stay, beach.”  I got the shot and that’s all that mattered.  We live about 5 minutes from the beach and the beach goes for about 15 kilometers or longer.  The first bit of the beach is for the two leggers and from beach entrance 221, it’s a free-for-all for dogs.  Charlie loves to go to the beach because he can run with his friends (or run away from them), chase his ball and not think about having a leash hooked to his collar.

All was well until one quirky wave came up when I wasn’t looking and hit me pointedly in the crotch.  Not much else got wet so it looked like I’d peed all over myself.  A man who saw it happen came by and laughed.  Thanks for nothing. I decided that I’d had enough and went back to the car.

Pumpkin and Asparagus Quiche

While John washed off all the sand, I made a quiche for lunch.  I’d made the dough for the crust before we left and rolled it out and quickly mixed the filling.  I love quiche and it’s a good thing that it’s a quick preparation.  I used leftover roasted pumpkin that didn’t have a lot of color, a bit of asparagus that I hadn’t yet cooked, a tiny bit of leftover sauteed onions and a handful of chopped chives.

I used the  best pie crust recipe and a quiche dish I bought at an op shop.  For the two of us, we don’t need a huge pan and this one was the perfect size for us.

A quiche is a great way to use leftovers that don't look like leftovers. It's a newover that saves money and reduces waste AND tastes great.

Serves: 4
Ingredients
  • 1 recipe of pie crust
  • 1 cup roasted pumpkin/winter squash (or any other leftover vegetables you want to use)
  • ½ cup asparagus (1-inch pieces)
  • ¼ cup sauteed onion
  • 3 eggs
  • 225 ml / 1 cup cream
  • pinch of nutmeg
  • ½ cup grated cheese (I used gruyere but any other cheese you like will be good or you can leave it out altogether)
  • ⅛ teaspoon white pepper
  • ½ teaspoon salt (or to taste)
Instructions
  1. Prepare pie crust, and chill and then roll out and place into a quiche or pie dish and place in the refrigerator while you make the filling.
  2. Preheat oven to 180C/350F
  3. Whisk together the eggs and cream, salt, pepper and nutmeg
  4. Tumble the vegetables into the pie crust, sprinkle over the grated cheese and and pour over the filling. (I put the pie crust into the oven and pour the filling there because it's less of a risk to dump it on the floor)
  5. Bake for about 40 minutes until the filling rises into the center and is set and golden brown.
  6. Serve with a small salad for a perfect lunch

    I am also very disappointed at the crotch that went undocumented. Coming from a food blogger with such skills in photography, it is hard to comprehend. And accept. Still, the pumpkin quiche made up for the disappointment…

    I haven’t made quiche in a while as there is only so much food one person can consume but after I finish the pork tenderloin I made yesterday, and the chicken pad thai I’m making tomorrow and the spicy Korean shredded turkey leg in my freezer, and the falafel, and the stewed beef that hasn’t been turned into stroganoff yet … well, a quiche will be nice. Probably with acorn squash or something similar cause this is not the year for pumpkin in my 3 yr rotation.

    I love your quiche, I love that you made it in a dish bought from an op shop (that’s where you find the very best quiche dishes, right!), I love that you said all Charlie heard was ‘blah blah blah beach’… the part about getting soaked, well that’s funny… : D PS am very envious that you’re five minutes from a beach!     That is a beautiful quiche! I love the golden colors, and the combination of pumpkin and asparagus sounds really good.

    I always get too lazy to make crust for quiche (and then of course I never have any on hand in the freezer) so I usually skip it, but the golden crust in one of the pictures is making me rethink the no crust thing.

    Thanks so much for the mention, Maureen. I do love quiche! I especially love quiche with homemade pastry but if you don’t have the time, filo will work just fine. You’re very blessed that you can take your dog to the beach and let him be off the leash. I think QLD is a lot more friendly towards our four-legged friends than Sydney. But fortunately, I have an unleashed dog park near me that I take my girls to. They’re pretty hopeless though; they don’t run around and prefer to just sit next to me. I love how you made your quiche with what you had available – it looks really tasty xx

I once stepped into a huge pile of poop just as I was passing a guy. I commented ‘could have done without that’ – he gave me disgusted look and hurried his pace. Oh well…

    Your post and your comments made my day, could not help laughing, how hilarious, I too would have loved to see a photo.
    This is the 3rd recipe I read recently combining eggs with pumpkin/winter squash definitely saving recipe. Asparagus is not in season but we can still find them in the food market.
