Ice Cream Sandwiches and Baked Brie

What a combo, eh?  Not to worry, they aren’t consumed together or even at the same time.  These two beauties were my guest posts this week on two wonderful blogs owned by equally wonderful bloggers.  Shea from DixieChikCooks offered me a guest post on her blog DixieChikCooks.com  and Roberta from MoreThymeThanDough.com (@MoreThymeBlog) made the same offer.  They are both good friends I met on Twitter.  If you’re on Twitter and aren’t following them both, you’re missing out on good tweets.

I love ice cream.  I mean I really, really love ice cream, so one day when I was watching cooking TV while eating a sandwich (don’t we all do that?) Donna Hay was on.  I’m assuming her show is on lots of places because she lists both Fahrenheit and Celsius temperatures.  Anyway, Donna Hay’s motto is Fast, Fresh and Simple and her ice cream sandwiches were just that.  She made coconut macaroon cookies using an egg ring to shape them and then put a scoop of strawberry ice cream and pushed the cookies together til the ice cream just peeked out the sides.  It looked so easy and so good.

Making ice cream is my thing so I cranked up my best friend Nemox and I made some fresh strawberry ice cream and put it in the freezer to finish and then went on to the macaroons.  Three ingredients.  Egg whites, powdered sugar and dessicated coconut.

When Shea asked me if I would like to do a guest post on her blog I was a bit nervous. It was my very first time and I had no clue how to do it.  I didn’t know how to format the post to send it to her or how she wanted the photos and most stressing of all was what to choose for the dish.  On my own blog I post things that I think are good — for me or for my family or guests — but when you’re posting on someone else’s blog, you don’t want to post anything ordinary.  She was really kind and explained what I needed to do and I said I was making brie baked in phyllo dough with caramelized onions and cashews, she said that would be fine.

This is a favorite appetizer of ours and we always have our friends asking for it again.  It’s not difficult to prepare and it’s a nice companion to cold nibblies.

To all my fellow American friends, I hope you have a fantastic 4th of July celebration.  Please post photos of your fun times.  Not too many people celebrate the 4th of July in Australia.  It’s sort of the day after the 3rd and the day before the 5th here.  🙂  I’m celebrating!
