I should name this one “My Favorite Sandwich” because whenever I’m feeling a bit lonesome for my family I find an excuse to make this sandwich. Tonight we ate it with sweet potato fries and it was yummy.
You could add a bit of rocket to this sandwich and it would give it another level of flavor but I have problems eating rocket so I only add it if we’re serving this for lunch when guests are here.
I love this sandwich on Turkish bread but the best laid plans and all that, I forgot to go to the bakery and remembered it about 5 minutes after they closed. So we made do what what we had on hand. Doesn’t make for the best photos.
Butter the bread and add tender chicken slices, some caramelized onions (I put a splash of good balsamic vinegar just at the end of the onion cooking for a hint of a zing) and slices of brie. Then I tuck cashews on top of the pieces of brie so they’ll have something to stick to and won’t come dropping out of the sandwich with the first bite. Pop it into a sandwich press or a skillet and heat until the cheese begins to ooze. Isn’t ooze a fantastic word to describe melted cheese? I can almost taste it when I hear the word.
The result is a chicken sandwich with tangy sweet onions and the crunch of cashews. We don’t normally eat sandwiches for dinner but that’s what we had tonight.
