Broccoli Coleslaw

I made this really good and really easy broccoli coleslaw today. I know I could have made the dressing from scratch and grated all the veggies but sometimes using store bought ingredients saves a lot of time on a busy day like today.

It’s Mother’s Day and I went along with my inlaws for a picnic at a nearby lake where there’s a lovely playground for children. Joan loves to watch children play. She taught kindergarten and elementary school children for many many years and I suppose that love of children never leaves you — even when you’re 90 and have dementia.

She really enjoyed getting out in the sunshine and eating her picnic lunch. First we had some lovely Turkish bread with olive oil, balsamic vinegar and dukkah to dip the bread in. It’s Joan’s favorite thing and it’s not something you find in nursing homes. We always take some on our picnics. Joan’s not really able to do restaurants very well any more as it’s more stress than fun for her.

Broccoli Coleslaw

When I brought out the broccoli coleslaw she wasn’t too sure about the green but one bite and she was a happy eater. She told me she wanted some more of that and she pointed out she still had some on her plate. That wasn’t enough so I put more on her plate and she ate it all.

We fed some magpies, watched the little ones playing and ate until we were full. That’s what Mother’s Day should be – just chilling out with mum.

This is a quick salad with very little prep work

Recipe type: Salad

Serves: 8
Ingredients
  • 1 package coleslaw mix
  • ½ head of fresh broccoli
  • ¼ medium onion grated
  • 1 bottle of store bought coleslaw dressing (I used ZoOsh)
Instructions
  1. Grate onion
  2. Put the broccoli in a food processor and pulse until it's small pieces
  3. Add the coleslaw mix and pulse 1 time just to break up any large pieces of cabbage
  4. Pour it all into a large bowl and add the coleslaw dressing. My salad took about ½ cup but everyone is different as to how much dressing they like.

Even at 90 and 94, you never lose your need for love. I did say SMILE!!

    Methinks the last two beautiful photos kind’of ‘push’ the broccoli slaw into second place. Heart-warming . . . Make a lot of slaw, admittedly from scratch with own version of dressing but have never added broccoli which actually is one of my fave vegetables. Shall certainly try 🙂 !!

    It looks like you had perfect weather for Mother’s Day. I think it’s really sweet that you were able to take Joan and Rob out for the day and that Joan was able to relax and enjoy herself and watch the children play.     This looks good! I like the idea of including both broccoli and cabbage.

    What a great idea to add some green to your coleslaw. Coleslaw is actually one of my favorite ways to eat salad – I love eating crunchy vegetables instead of leafy vegetables. Plus it’s so easy to make!
