The weekend has arrived, and you’ve worked a full week without rest or relaxation. It’s been either work or sleep, and you’ve counted down the hours until the weekend is yours. The options for the weekend are endless. You have a choice of football or soccer, rugby, a cricket test, a round of WoW, or simply catching up with your mates with a six-pack of cold ones tucked under your arm. And food? Surely no lazy person goes hungry but what to cook that’s quick, easy and tastes good?
Regardless of whether you eat to live or live to eat, you need to line your stomach against the influx of all that beer or bourbon. You could go out for pizza but save yourself the extra calories and cash with any (or all) of these three easy, tasty lunch ideas, especially for lazy people.
The BLT
Bacon, lettuce and tomato, two slabs of bread. Do we need to say anything else? Okay yes, you can add avocado if you wish. Imagine the mouth-watering goodness of crispy bacon as it hits your tastebuds, the fresh crunch lettuce and those plump red tomatoes bursting with flavour.
The combination of lettuce, tomato and bacon is a traditional sandwich, and there’s a lot to say for keeping with traditions. For me, the aroma of bacon wafting through the house while it’s cooking gets me hungry.
If you’re feeling particularly adventurous, why not sink your teeth into the nutty, waxy, buttery taste of avocado and reconfigure the BLT into a BLAT; not only is this sandwich mostly good for you, bacon can easily be cooked in your microwave oven Really, it’s that simple.
The Hot Dog
Okay, you’re thinking I’m off my rocker but seriously, don’t you love a good hot dog? Yes, it’s pretty simple. Hot dog bun, frankfurt, tomato sauce, a smear of butter, relish, mustard or even a shred of cheese, slapped together to make the American classic in under five minutes.
As with the BLT, you can tuck your hot dog in a fresh white bun and pop it in the microwave, and you’ll be eating in seconds. Add a few pieces of onion, a dash of chutney, and maybe even a stripe of English mustard to give it an extra zing – there isn’t much you can’t do with a hot dog, and the possibilities are endless according to what you can be bothered to do with your time. Yes, we know you’re a lazy man.
Pasta
Now if you’re feeling the slightest bit enthusiastic about preparing a meal, a dish of pasta only requires a dash of extra effort. A few mushrooms, chopped onions, tomatoes and a bit of garlic, a pinch of oregano and a mash of minced beef, chicken or take the skin off a couple of Italian sausages and you’ll have enough to feed an army of friends or yourself for a couple of days. Simply refrigerate the leftovers and reheat them in the microwave as required.
Some people say they don’t cook because of the pile of dirty dishes at the end. If you clean up as you go, you’ll minimise the hassle and any clean-up stress, plus you’ll be encouraged to cook more often. I know you’re lazy, but seriously, you’re a big person now who can handle cooking and cleaning.

My hubby’s the ultimate lazy man when I comes to cooking. His ‘gourmet’ lazy mans lunch is pasta, boiled up then when ready you make a simple sauce of yogurt and tomato sauce straight from the fridge. The heat and steam from the pasta warms up the yogurt and tomato sauce creating a creamy tasty combination. Men!

I bulk buy quality diced bacon, fry it up, seal it so always have some on hand to use right away; saves time, money and mucking around when nothing but a BLT for the lazy man will do!
I am fortunate as Chef Georgio is more than happy to make brekkie, lunch and dinner for me too when I am tired! AND cleans up, true!

We had BLTs tonight. John ate the sandwich in the photo and Rob and I smelled that bacon and instead of crumbed lamb chops we both wanted a BLT. 🙂

I am posting my husband to you – he’s just seen the BLT and says he prefers your food to mine. He comes with a free playstation and a change of underpants (he can turn them inside out on alternate days) so you won’t have to occupy him, or wash his clothes – just feed him occasionally 😉
ROFL, hey, I have John’s 93 year old father with us – I do enough laundry to sink a ship. At 93 there are “issues”. We have lots of food because he eats like a horse. He’s gained 4 kilos since he arrived. Does hubby want to gain some weight? I can handle that. Just no more underwear to wash. 🙂
It’s getting cold here so a little extra weight will keep him warm – he’ll wash his own undies if it means he gets to eat what you cook… I absolutely promise 😉

We can be really lazy sometimes! We usually make food in quantity and freeze it, so a decent meal is only a quick thaw away. But we’ll certainly do sandwiches, too. A BLT is a favorite around here when we have decent tomatoes. Otherwise we’ll often substitute a fried egg for the tomatoes, for a variation on the classic fried egg sandwich. Fun post – thanks.

Perfect easy eats. Love BLTs. Without mayo. Yes, I do not like mayo. I put a little butter on the hot toast.
But the best is the pasta. Yours looks fantastic! My fave quick & easy is just pasta, melted butter with a bit of garlic and Parmesan Cheese. Heaven. Heavenly simplicity.
John doesn’t eat mayonnaise either. That’s okay with me because I’ll eat both your share and his. 🙂

I laughed out loud when I read this, Maureen. Such a great post. I cannot say Peter is a lazy man in the kitchen… (when I let him into my territory) he will ‘hunt and gather’ until he finds something to eat, and if there’s nothing in the house, he will drive three minutes up the road to the main shopping centre to buy something, bring it home and make. Trouble is, having been a bachelor for such a long time, he forgets to ask me if I would like something! : D
John is really quite kind. He usually asks and he always brings me a surprise. An ice cream bar, an American candy bar, some popcorn – whatever catches his eye. 🙂

Hot dogs are a very regular lunch in our house on the weekends!
I insist on slicing the sides of the buns and toasting them and then stuffing the insides with onions and the trimmings. John now eats the buns toasted. When I first did it, he thought I was nuts.

I like to have a can (or 3) of baked beans in the pantry for just such occasions. You can cut up a couple of hot dogs and add them to the beans. I’ve even added 5 or 6 cooked strips of bacon to the beans. Dig in with a couple of slices of toasted and buttered bread. Great foundations for a few beer. 🙂
And if you have a freezer, defrost a container of chili and pour it over a bag of nacho or tortilla chips on a baking sheet lined with aluminum foil, scatter grated cheddar cheese (your have a bag of pre-grated cheddar or monterey jack in there don’t you) over the top, and pop it into a 350 deg oven. You can add some salsa, sour cream and avocado chunks on the top too. When you’re done, crumple up the foil and toss it. Saves on the washing .
All lazy people need to head to your house – you have dinner covered!

Oh they all lool too complex for my man… he’s veggie and very often SO happy with cheese, bread and pickle. Which is lucky really! Must buy more cheese….
Mine isn’t veggie and he’s not a happy cook in the kitchen. He’ll do it without complaining but given a choice he’d go out or order in.
This has my name written all over it haha! I max out my cooking days to 4 times a week. Some days I just feel like eating a meat pie lol

Cereal 😛 But I think that is more a lunch idea for the lazy woman than the lazy man. My husband’s weekends lunches are pasta and baked beans on toast (not together!) so I think you’re definitely on to your ideas here 🙂
I’m a cereal eater too. If I can’t be bothered, a bowl of cereal and a banana work just fine.

I’m sorry, Maureen, but I just love this post! I love a great BLT and we often eat hot dogs on buns. And pasta is a lifesaver! Yes, one, two, three just great meals for the lazy *ahem* man.
But you know what my lazy meal really is (when we don’t go out and buy kabobs-frites)? Pizza. Homemade dough and all. I make it when we just can’t think of anything else to make and don’t have the energy to really cook.
I doubt you two ever have lazy meals. Homemade dough for pizza is far from lazy in my book. 🙂 Peanut butter on a spoon is lazy. LOL

I made one sandwich for the photo shoot and in my rush, left the avocado sitting on the counter. The bacon cooking smelled so good I had to have a BLAT for dinner.

My man’s not lazy he’s just got zero interest. He couldn’t wait for lunch last weekend so I suggested he fried himself an egg and he asked where the saucepans were kept. We’ve only been in the apartment 6 months……BLAT is a regular for us – but only if I make it!!

The “lazy” man in my life has a great recipe…. have his wife cook it. LOL! I love a good BLT… hot dog and pasta. Sometimes it’s just what this lazy girl wants to make on those hectic days. 🙂

My lazy pasta dish lately is to mix some pre-made pesto sauce (Costco has a great pesto sauce) with pasta and fry up an egg to serve over the pasta. While the egg is frying, I throw in a little pancetta. Serve with a little cheese over it, and you’ve got a yummy meal! 🙂
