I'm in Australia so I guess that's Australian cuisine? Heh. These are not difficult and they're delicious.

  • 3-4 large potatoes. Mine were about the size of my fist sliced about ⅛"/3mm thick.
  • 2 large cloves of garlic minced or chopped
  • 2 tablespoons butter
  • 1 cup of chicken stock (or enough to cover your potatoes)
  • ⅛ teaspoon ground pepper
  • salt if it needs it. If your stock is salty, you might not need any.
  1. Place potatoes in a large microwaveable bowl or measuring cup and cover with chicken stock
  2. Cook in microwave on high for 4 minutes
  3. Drain potatoes and save the stock
  4. Heat a large skillet on medium low and add the butter. Once the butter begins to sizzle, add the garlic and cook gently for 2 minutes.
  5. Add the potato slices to the skillet and cook on medium low until golden brown and then flip over. If the garlic begins to brown too quickly, add some of the reserved stock.
  6. Test one of the potatoes for seasoning and sprinkle over the pepper and any salt that might be needed.
  7. Serve hot.
