This is a beautiful side dish that's delicious to eat and easy to make.

Ingredients
  • 1 punnet of cherry tomatoes
  • 2 tablespoons olive oil
  • handful of fresh basil leaves
  • 2 springs fresh thyme (optional)
  • salt and pepper
Instructions
  1. Preheat oven to 180C/350F
  2. Place tomatoes in a small baking dish.
  3. Drizzle with olive oil
  4. Tear basil leaves and toss in the thyme (Retrieve the thyme stems before serving)
  5. Stir to coat everything with olive oil
  6. Season with salt and pepper
  7. Place in the oven for about 30 minutes or until the tomatoes have popped and are soft.
