  1. Preheat oven to 200C/400F
  2. Rub lamb with the spices using a lot if you like a lot of spice or a little if you want the roast lightly done.
  3. Slice onion and place in a lightly oiled baking pan.
  4. Place rubbed roast over the onions and place in the oven for 30 minutes.
  5. Reduce heat to 100C/212F and cook uncovered for 8 hours (or even longer) until the meat falls off the bones.
  6. Pull apart using two forks.
