Light fluffy waffles perfect to soak up maple or blueberry syrup

  • 1½ cups plain flour
  • ¼ cup self-raising flour
  • ¼ cup caster or superfine sugar
  • 2 eggs, separated
  • 1½ cups milk
  • 60 grams butter, melted
  • 2 tbsp water
  1. Sift flours and sugar into a bowl, make a well in the middle of the flours.
  2. Combine egg yolks, milk, butter and water in a measuring cup and add it to the well in the flour and mix until smooth.
  3. Whip egg whites until soft peaks form and fold into batter in two batches.
  4. Preheat waffle iron and drop ⅓ cup of batter into the center of the hot waffle iron and cook about 2 minutes.
