Apple Streusel Coffee Cake

This is a quick cake to put together and it tastes really great when shared with a friend over a cup of tea.

Streusel Topping
  • ¾ cup all-purpose flour
  • ½ cup packed light brown sugar
  • ½ tsp cinnamon
  • ½ tsp coarse salt
  • 113 grams (4 oz, ½ stick) butter
  • ½ cup coarsely chopped toasted pecans or walnuts
  • 2 medium apples peeled and chop one and slice the other thinly
  • 60 grams butter, melted
  • 200ml milk
  • 1 egg
  • ½ tsp vanilla extract
  • 190 grams self-rising flour
  • ½ tsp cinnamon
  • 100 grams sugar (I used raw)
  • pinch salt
  1. Mix the flour, sugar, cinnamon and salt together.
  2. Cut the butter with a pastry cutter or your fingers.
  3. Mix in pecans and set aside.
  1. Preheat oven to 180C / 350F
  2. Prepare apples just before making cake so they don't turn brown and ugly
  3. Place melted butter in in mixing bowl and add the milk, egg and vanilla extract and mix well in a mixer or with a wire whisk.
  4. Add flour, sugar and salt and mix till well combined.
  5. Add chopped apple and pour into a greased and floured tin
  6. Place apple slices on top in a circular pattern.
  7. Dust the top with streusel mixture.
  8. Bake for 30 minutes or til cake is risen and done.
