Molten Chocolate Fondants

- ½ cup dark chocolate chips or good chopped dark chocolate
- ½ cup butter
- 2 large eggs
- ½ cup sugar
- 3 tbs plain flour
- Preheat oven to 185C/375F.
- Grease the bottom and sides of 4 one-cup ramekins with butter.
- Melt chocolate and butter in the microwave in 10 second bursts, stirring every 10 seconds. Stop when chocolate is just melted.
- Remove from heat and let cool.
- Whisk together eggs, sugar and flour until frothy.
- Pour egg mixture into melted chocolate and stir until smooth.
- Divide mixture into buttered ramekins and bake for 20 minutes.
You can make these ahead of time and place the filled ramekins in the refrigerator and then straight into the oven and bake for 23 minutes.
