This is really a soufflé for dummies. No worries that it will collapse

  • 4 eggs separated
  • 100 grams (1/2 cup) of sugar
  • 1 egg white
  • 1 tbs water
  • 3 tbs mixed fruit
  • butter for frying pan
  • 1 cup whipping cream
  • 1 tbs icing sugar
  • 1 tsp vanilla extract
  1. Preheat oven to 180C/350F
  2. Whip cream, add sugar and vanilla extract and set aside.
  3. Place a 20cm frying pan (that can go in the oven) on medium heat
  4. Beat egg whites until stiff peaks but not dry
  5. Whisk egg yolks and sugar until thick and pale
  6. Fold whites into yolk mixture being careful not to deflate the whites
  7. Pour ½ mixture into frying pan and smooth top.
  8. Cook for 30-60 seconds and then place in the oven for 2-3 minutes until puffed and golden. Set aside to cool while you make the 2nd omelette
  9. Pour mixed fruit over half the omelette and cover fruit with whipped cream
  10. Fold omelette over and dust with icing sugar and serve
