Meatloaf Made with Mushroom Soup

This is an easy, family dinner that can be made in a jiffy. It could even go in a slow cooker and be ready for dinner.

  • ½ onion finely chopped
  • 1 pat butter
  • 1 egg, slightly beaten
  • ½ cup finely crushed cracker crumbs (bread crumbs will work too)
  • ½ can condensed cream of mushroom soup (You can use the other half to make gravy)
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 pound minced (ground) beef
  1. Preheat oven to 185C/365F
  2. Mix all ingredients in a bowl until well blended and either place in a loaf pan or shape on a rimmed baking sheet.
  3. Bake for 1 hour
It's easy to increase the portions by adding another pound of ground beef and a little more soup, salt and pepper. If it seems too wet, add more cracker crumbs.
