This drink tastes just like the ones you get in the big cups in the Caribbean.

  • 120 ml (4 ounces) cream of coconut (I used Coco Lopez)
  • 120 ml (4 ounces) pineapple juice
  • 88 ml (3 ounces) rum
  • 2 cups ice cubes
  • maraschino cherries and fresh pineapple wedge for garnish
  1. Place everything in a blender and whiz until there are no pieces of ice and the mixture is partially frozen.
  2. Pour into glasses and garnish with a cherry and a wedge of fresh pineapple.
