I can’t remember the first time I had loaded fries, but something went off in my brain that told me I would never eat fries another way, ever. I wanted an easy recipe for my loaded fries, too, because they are delicious, full of flavor and not too difficult to make.
Lots of people cram tons of ingredients into their loaded fries but I’m a simple woman. Using fresh potatoes, I peel them and cut into sticks. Then I soak them in cold water for at least thirty minutes and up to an hour.

After draining, I dry the potato sticks as much as I can and fry in oil at 160C for 5-6 minutes. I take them out of the oil and place them on a rack over a baking tray covered with paper towels. Once they are cool, I increase the temperature of the oil to 190C for 4 minutes or until the fries are golden brown.
To get the loaded fries ready to eat, I lightly salt them and add fully cooked bacon pieces, grated cheese, sour cream and sliced green onions. It’s a hassle-free side dish that everyone at my table loves. I’m hungry just thinking about this dish.
- 4 large potatoes
- 4 slices of cooked bacon
- 1 cup grated cheddar cheese
- ⅓ cup sour cream
- 2 green onions, thinly sliced
- Peel potatoes, cut into sticks and place in a bowl of cold water for 30-60 minutes
- Cook slices of bacon until fully cooked and easy to crumble.
- Dry potato sticks and cook in oil pre-heated to 160C for 5 to 6 minutes.
- Remove from oil and place on a rack over a baking tray covered in paper towels.
- Once the potato sticks have cooled, increase the temperature of the oil to 190C and finish cooking for another 3 to 4 minutes or until golden brown.
- Place cooked potatoes on a serving platter and sprinkle the grated cheese on top, then crumble the bacon slices and green onion and top with the sour cream.
